Gluten-free Matcha Squares

Amazing original recipe for gluten-free squares from our fan Svatava Navrátilová. It will definitely bring joy to everyone who is avoiding gluten, and will cheer everyone else with its colour. Try for yourself!

Ingredients

For batter:

  • 6 eggs
  • 6 tablespoons of oil
  • 6 tablespoons of granulated sugar
  • 6 tablespoons of gluten-free flour (e. g. Jizerka, Dove’s Farm or other)
  • 1 packet of baking powder
  • lemon peel
  • 1 packet of vanilla sugar
  • 6 g Bio Matcha Tea Chef

For cream:

  • 500 g smooth cheese
  • 100 g granulated sugar
  • 250 g butter

Coating:

  • 1 bar of baking chocolate
  • 100 g butter

Instructions

  1. Separate egg yolks and egg whites.
  2. Mix egg yolks with sugar, add oil and lemon peel.
  3. Add vanilla sugar, flour and baking powder.
  4. Whisk the egg whites and carefully incorporate them in the batter. You should have a smooth batter.
  5. Spread the batter on a baking tin with a baking paper and put in the oven for 8-10 minutes on 220 °C. Then take the tin out and let it cool.
  6. In the meanwhile, mix the cheese, sugar, and softened butter. Spread this mix over the baked batter.
  7. Let the cream stiffen and then pour melted chocolate over the top.
  8. Let it stiffen and you are ready to serve.
