The leaves matter
Matcha Tea can be divided into various categories and grades. This division depends on the leaves that are used for the final matcha mix. Because the tea plantations are shaded, the lower the leaves grow, the less sunlight they get and the worse is their quality.
Only a few top leaves are harvested for matcha but there is still a great difference in the leaf quality.
Harmony works great in recipes
Our basic product Bio Matcha Tea Harmony is made from the medium high quality that is characteristic with grass green colour and a strong umami taste.
Precisely because Harmony’s taste is stronger, it pairs greatly with for example fresh fruit juice, high quality sirup, ginger, honey, various spices, milk, coconut water, or a 100% juice. Harmony is an amazing grade for all matcha beginners who are navigating their way in the world of matcha and wonder which form of matcha is the right for them. In Harmony, we can find amazing aminoacids that help improve our mood, strengthen our memory, induce the feeling of relaxed mind and at the same time provide us with the feeling of intensive concentration. This grade of matcha also contains the tea form of caffeine – theophylline – which guarantees gradual release of energy for 3-6 hours. The leaves for Harmony are harvested in Japan, in Aichi and Shizuoka areas.
Imperial as the golden mean
Imperial is the middle road between Harmony and Premium. It has a finer and more subtle taste than Harmony but still has a stronger and more distinct taste than Premium.
When preparing Imperial, a similarly rich foam appears as when preparing Premium but Imperial has even more amino acids and provides you with more energy than Harmony. On the other hand, Imperial has a lower number of antioxidants than Premium. Imperial comes from Shizuoka area, right under the beautiful mountain Fuji. The climate in this area is ideal for growing high quality matcha.
The great advantage of Imperial is that it tastes great in its natural form but also flavoured. Although Imperial is stronger than Premium, it still tastes amazing on its own. But if you prefer flavoured matcha, Imperial tastes great in milk, mixed with fruit juice, or with a few drops of high quality sirup precisely because of its distinct taste.
If you want to have at your disposal the kind of matcha that allows you to decide during its preparation if you want it natural or flavoured, Imperial is the right matcha for you.
Premium is great on its own
The higher-grade Bio Matcha Tea Premium is on the other hand characteristic with its vibrant green colour and delicate taste, which should not be flavoured because adding more ingredients would destroy the fine taste of this matcha.
Because of that we recommend trying Harmony or Imperial first and work your way to Premium – only then you can appreciate the refined and fresh taste of Premium. Bio Matcha Tea Premium is even greener, contains even more aminoacids and even more caffeine than Bio Matcha Tea Harmony.
A lower dose of Premium thus can provide you with even more aminoacids and even more intensive concentration than Harmony. Meanwhile the gradual release of energy for 3-6 hours remains the same and is still free of the usual side effects of caffeine drinks or coffee (such as restlessness, perspiration, headache). The leaves for Premium are picked by hand in Japan, in Aichi area.
We do not recommend Premium as an ingredient in cooking or baking.
Harmony, Imperial and Premium - always bio and fresh
All three kinds of Matcha Tea are processed the same traditional way – the leaves are grown, steamed, then the stems get separated from the pulp of the leaves, and then they are milled in the traditional granite mills. All three teas are grown in bio (organic) conditions and all are carefully tested on the presence of mould, yeast, pesticide or e. coli bacteria. These tests are publicaly available on our webpages.
Beware of the strength of the tea!
Harmony, Imperial, or Premium should NOT be drank on an empty stomach. The tea is very strong and can cause nausea.
